Flax Oatmeal Cookies with Carob Chips
Baking time: 10 minutes
Yield: 72 cookies
Ingredients
1 cup canola
1 cup sugar
1 cup Brown sugar
2 eggs
1 teaspoon vanilla
2 cups all purpose unbleached flour
1 cup oatmeal
1/2 cup stabilized ground flaxseed
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
2 cups carob chips
1 1/2 cups almonds, chopped
Preparation
- Cream canola and sugars until they are light and fluffy.Then add eggs and vanilla and beat well.
- Mix baking soda,salt,baking powder,flour oatmeal,stabilized ground flaxseed, together. Stir into creamed mixture.Then add carob chips and almonds.Mix well until blended.
- Form into 1 inch balls.Put these on an ungreased cookie sheet,leaving about 2 inches between cookies.
- Bake at 350 degree Fahrenheit for 10 minutes.
