Twice-Baked Potatoes
Ingredients
4 Medium Russet potatoes-7-9 ounces
Vegetables oil to rub on potatoes skins
2 tablespoons butter
1/2 cup milk
1/2 cup sour cream
4 ounces shredded cheddar cheese
1/2 teaspoon salt
Pinch ground black pepper
Preparation
- Preheat oven to 400 degree Fahrenheit
- Rub oil to the potato skins to make it crispy
- Bake the potatoes for 1 hour until it is done.
- Be careful to remove potatoes form the oven and allow to cool for 10 minutes.
- Cut the potatoes in half lengthwise and scoop out pulp with a small spoon.
- Mash the potato pulp with fork until it is smooth
- Add the remaining ingredients until it combines well.
- Use spoon to scoop the mixture into empty potato shells.
- Set the oven heat higher to broil
- Broil potatoes for 10-15 minutes until spotty brown and crisp.
