Banana Berry Muffins Gluten-Free

Banana Berry Muffins

 


Ingredients


1 1/2 cups oat bran

1 egg

1/2 cup wheat germ

1/2 cup quick cooking oats

2 large ripe bananas-mash it

4 tablespoons stabilized ground flaxseed

1 1/4 cups rice milk

1/4- 1/2 cup sugar

1/2 teaspoon baking soda

2 tablespoon baking soda

3/4 cup ripe whole berries


Preparations


  • Let the oven be preheat to 400 degrees Fahrenheit
  • Coat the muffin tins lightly with cooking spray.The wheat germ,quick oats,oat bran,stabilized ground flax seed,sugar,baking soda, and pumpkin pie spice should be combined in a large bowl.
  • Whisk egg in a medium bowl.then add banana and rice milk.
  • Combine the dried ingredients together with the wet ones and stir until moist.
  • Take half of the muffin batter and put them in the bottom of each tin.Add equal amounts of berries to each tin and then cover the remaining muffin batter.
  • Bake this for 15-20 minutes.
