Peanut Butter Apricot Cookies Recipes

Peanut Butter Apricot Cookies

 

 Dry Ingredients

3/4 cup whole wheat flour
1/4 cup flax seed meal
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon cardamom

Wet Ingredients
1 cup brown sugar
4 tablespoons peanut butter
1 tablespoon tahini
2 eggs (or equivalent egg sub. for vegan cookies)

Mix In

1 cup dried apricot (cut into smaller chunks)
1/2 cup oats

Directions:

1.Preheat oven to 350 degrees.
2.Grease a cookie sheet and line it with parchment paper.
3.Whisk together dry ingredients.
4.Blend wet ingredients until as close to smooth as possible.
5.Mix dry ingredients with the wet mixture until fully incorporated. The batter will be thick and sticky, so it would probably be easiest to do this with a fork or mixing spoon.
6.Stir in the oats and apricots.
7.Form into balls and flatten onto parchment paper. Again, this is easier to do with wet hands.
8.Bake for about 15 to 20 minutes or until the tops look golden (don't wait for them to brown or they will be too hard when they cool).
9.To store (and for transportation purposes), I like to wrap each cookie in plastic wrap. Voila! Bakery-style

Gluten free Peanut Butter Chocolate Chip Cookies

 


Ingredients

 1/2 cup rolled oats
1/2 cup white sugar
1/4 cup dark brown sugar
1/4 cup dark chocolate chips
2 teaspoons vanilla extract
1 egg

Directions:

1. Combine all ingredients. Put on non stick cookie sheet sprayed with (lightly Pam cooking spray) in cookie balls shapes as large or small as you want. Smash cookies with spoon till flat.

2.Bake at 325°F for 20 minutes.

Ingredients


1 cup butter
2 teaspoon vanilla
1 cup white sugar
1/3 cup unsweetened applesauce
3 1/2 cups all purpose unbleached flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1 teaspoon cream tartar
1 cup brwon sugar,packed
1/2 cup walnuts or pecans-chopped or ground
1 cup stabilized ground flaxseed
1 cup quick oats
1 cup rice krispies


Preparation

  • Preheat oven to 350 degree Fahrenheit
  • In a large bowl,beat together white sugar,butter,egg,vanilla, and applesauce.Then set it aside.
  • Take another bowl,sift together flour,baking soda,baking powder,salt, and cream of tartar.Set this bowl aside.
  • Combine all the set asides mixtures with nuts and stabilized ground flax seed
  • Drop by rounded heaping teaspoon on ungreased cookies sheets
  • Bake at 350 degree Fahrenheit for 10-12 minutes
  •  Ensure each cookies contains 1/3 tablespoon flaxseed.

Baking time-8-10 minutes

Ingredients
1/2 cup butter
1/2 cup white sugar
1/2 cup Brown sugar
1/4 cup cold strong coffee
1 egg
1 cup raisins
1 3/4 cup all purpose unbleached flour
1 cup walnuts chopped
3/4 cup stabilized ground flaxseed
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg


Preparation


  • Beat butter,sugars,coffee and egg together in a large bowl.
  • Stir in the remaining ingredients.Mix them well.
  • Form into 1 inch balls and place on an ungreased cookie sheet with space of about 2  inches between cookies.
  • Bake at 375 degree Fahrenheit until no indentation remains when touched for about 8-10 minutes.

1 cup canola
1 cup sugar
1 cup Brown sugar
2 eggs

2 cups carob chips
1 1/2 cups almonds, chopped


Preparation


  • Cream canola and sugars until they are light and fluffy.Then add eggs and vanilla and beat well.
  • Mix baking soda,salt,baking powder,flour oatmeal,stabilized ground flaxseed, together. Stir into creamed mixture.Then add carob chips and almonds.Mix well until blended.
  • Form into 1 inch balls.Put these on an ungreased cookie sheet,leaving about 2 inches between cookies.
  • Bake at 350 degree Fahrenheit for 10 minutes.

Ingredients:

1/2 cup butter
1/4 cup sugar
1 large egg,separated
1/4 teaspoon vanilla
1 cup all purpose unbleached flour
2 teaspoons stabilized ground flaxseed
1 egg white,whisked till it tuns frothy
1/3 cup stabilized ground flaxseed
1/4 cup jam or jelly.


Preparations:


  • Make a cream out of butter and sugar until light and fluffy.Then add beaten egg yolk and vanilla.
  • Stir flour into the creamed mixture.Roll into small balls,dip them in egg white and the roll in stabilized ground flaxseed.
  • Put in on an ungreased cookies sheet and dent the center.Bake this at 350 degree Fahrenheit for 5 minutes.Dent the cookies again repeatedly to bake for 8-10 minutes.
  • When it is baked,fill center with jam or jelly.

Ingredients:


1 cup butter
1 cup brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla
2 eggs beaten
2 cups all purpose unbleached flour

1/2 teaspoon salt
1 cup chocolate chips
1/4 cup stabilized ground flaxseed

Preparations:


  • Preheat oven to 350 degree Fahrenheit
  • Cream butter and sugars in a large bowl
  • add the vanilla and beaten eggs together
  • Combine flour,salt,baking soda,chocolate chips and stabilized ground flaxseed in a separate bowl.Then add the creamed mixture.
  • Drop a teaspoonful into a cookie sheet,leaving 2 inches between cookies
  • bake 10-12 minutes until it turns golden.
  • Remove from sheet and allow to cool.

Yield: 10-12 banana balls

Ingredients:


1 teaspoon lemon juice plus 1 teaspoon
1/4 cup apple,minced
1/2 cup ripe banana,mashed
2 tablespoons almond butter or other natural nut butter
1/2-3/4 cup crushed corn flakes
1/2 cup oats finely ground
1/2 cup dates,chopped
3 tablespoons unsweetened shredded coconut
2 tablespoons stabilized ground flaxseed
2 tablespoon carob powder and or unsweetened shredded coconut.This is optional.

Preparations:


  • Toss apple with 1 teaspoon lemon juice in a bowl.Take another bowl and combine banana with the other 1 teaspoon lemon juice and mix them well.
  • Combine dates,banana, and almond butter,puree until mixtures starts to tun to liquid.Put all these in a food processor or blender.
  • Combine puree with the remaining ingredients-with the exception of the optional carob powder or shredded coconut.All in a mixing bowl and mix well.
  • Take a spoonfuls of mixture and form into golf-sized balls.Roll them gently between your palms.Rolls each of them in a carob powder or shredded coconut.Put them in the fridge until chilled and then sit back to enjoy.

Granola Snack Bar Recipes

Prep time: 30 minutes
Yield: 48 bars Serving size: 1 bar

Ingredients:


4 Oz. Butter
1 lb. Miniature Marshmallows
6 oz. rolled oats
8 oz. Crushed graham crackers
5.5 oz. stabilized ground flaxseed
5.5 oz. raisins,chopped
2 oz. raw sunflower seeds,shelled
2 oz. unsweetened fine coconut

Preparations:


  • Melt the butter over low heat in large sauce pan.
  • Add the marshmallows cook as you stir constantly until marshmallows are melted.when the mixture is melted,remove from heat.
  • Stir in oats,stabilized ground flaxseed graham crumbs,raisins,sunflower seeds, and coconuts till they are thoroughly coated.
  • Press into a greased 9 x 13 inch pan with greased  fingers. If you want a thicker bar, press into 9 x 9 inch pan.
  • Allow to cool.Then cut into 6 rows lengthwise and 4 crosswise.

French Toast Recipes

Ingredients:


1 cup soymilk
1/4 cup nutritional yeast flakes
2 tablespoons sugar
1/6 teaspoon salt
1/4 teaspoon cinnamon
1 teaspoon lemon juice
1/2 teaspoon vanilla
1 tablespoon stabilized ground flaxseed
6 slices whole wheat bread or French bread


Preparations


  • Mix all the ingredients in a large bowl except the whole wheat bread.
  • Take the soymilk mixture and dip each slice of bread into it. Let the slice absorb each side,but take care that the bread do not sit in the liquid for too long.
  • Cook for 3 minutes on each side over medium heat in a lightly oiled skillet.
  • Then serve with maple syrup.

Ingredients


1 1/2 cups whole wheat pastry flour

2 teaspoon baking powder
2 teaspoon ground cinnamon
2/4 teaspoon cinnamon
 Dash nutmeg-this is optional
1/2 cup stabilized ground flaxseed
1 1/2 cups soy milk
1 1/2 tablespoon
1 1/2 teaspoon pure maple syrup
1 teaspoon vanilla-optional

Preparation


  • Take the dry ingredients and stir the liquid ingredients into them until mixed batter is thick and lumpy.If it get to thick to stir, or thicken while standing, add extra soy milk by the tablespoon.
  • Pour this to the waffle iron and cook according to the manufacturer's instruction.
  • Then serve immediately or keep warn in a oven set to 200 degree Fahrenheit while cooking the remaining waffles.

 Ingredients


1 cup all purpose unbleached flour
1/4 cup whole wheat pastry flour
1/4 cup quick cooking oats or oats flour
1/2 teaspoon salt
2 teaspoon baking powder
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/4 cup toasted walnuts or pecans finely chopped
1/3 cup stabilized ground flaxseed
1 1/2 cup soy milk
1 tablespoon canola oil
1 tablespoon pure maple syrup or sugar


Preparation


  • Sift the ingredients except walnut and oats.Put in a large bowl and then you add walnuts and oats.Then stir.Make a space in the dried ingredients and then add the wet ingredients.Stir well to combine.
  • Heat a griddle to a medium-high heat and lightly oil it.Use a 1/4 cup butter for each of the pancake.Cook this on the heated griddle until bubble appears right on the top,this would take about one to one and half minutes.Flip the pancakes and cook the other side until golden brown,do this for about 1 minute.
  • You can serve immediately to keep warm in an oven set in a lowest heat.

Tip

Toast 1/2 cup of walnuts or pecans.Finely chop 1/4 cup,and use the remaining in warm syrup.

4 Medium Russet potatoes-7-9 ounces
Vegetables oil to rub on potatoes skins

Preparation


  • Preheat oven to 400 degree Fahrenheit

Preparations

  • Coat the muffin tins lightly with cooking spray.The wheat germ,quick oats,oat bran,stabilized ground flax seed,sugar,baking soda, and pumpkin pie spice should be combined in a large bowl.
  • Whisk egg in a medium bowl.then add banana and rice milk.
  • Combine the dried ingredients together with the wet ones and stir until moist.
  • Take half of the muffin batter and put them in the bottom of each tin.Add equal amounts of berries to each tin and then cover the remaining muffin batter.

Banana Bread Recipe-Gluten Free

Ingredients


1 1/4 cups of all purpose unbleached flour
2/3 cup white sugar
2 tablespoon baking powder
1/4 cup canola oil
1/4 tablespoon salt
1 cup mashed bananas- 3 medium or 2 large ones
1/4 cup skim milk
1/3 cup chopped walnuts
3/4 cup stabilized ground flax seed
2 eggs

Preparations


  • You will preheat the oven to 350 degree Fahrenheit
  • Mix flour,sugar,baking powder and salt together in a large bowl.
  • Mash the banana in a food processor or bowl.After this, add eggs,milk,oil and vanilla.Then mix well together
  • Fold in chopped nuts and stabilized ground flax seed.
  • Cover 8 1/2 by 4 1/2 inch loaf pan with non-stick spray.
  • Pour the batter in a loaf pan.for 50-55 minutes bake until it turns brown or until a toothpick put in the center comes out clean.Allow it to coll in the pan on a rack for at least 10-15 minutes unmolding to cool completely on a rack.

Gluten-Free:Lemon Pickle

Lemon Pickle

 


This is actually an Indian condiment used in their delicacies.

Ingredients


Lemons-12 small or 6 large.Ensure it is thin skinned

Juice of 1 large or 2 small lemons
1/2 cup of salt
1/4 cup of red chili powder
1/2 cup of sugar
3 teaspoon turmeric powder
1 teeaspoon fenugreek seed
1 teaspoon black mustard seed

1/4 teaspoon asafoetida powder(do not use for gluten free recipes)

Preparation Methods


  • Wash the lemons and dry them well so that there is no water on the lemons.Cut off the stalk and any odd bits around the lemons.
  • Cut the lemons into small pieces of about 2cm and 3/4 inch on each side.Put them in a bowl.
  • Roast the fenugreek,black mustard dry on a pan of medium heat of about 5 minutes
  • Grind the roasted spices in a grinder,mortar and pestle
  • The ground spices,turmeric powder,salt,sugar and chili powder add to a bowl and mix together well.
  • Take all the mixture into a 2 liter jar or use a couple of smaller jars.Do allow to fill to the top.Let there be 1cm space.

Fermentation
Take the jar and place it where the heat of the sun will get to it.Take it indoor during evening and put it back out in the morning.Continue this for at least a month in summer and 2 months in winter.This is for the heat to ferment the pickle.

Notes
  • You don't need to be particular about the amount of sugar because the heat will ferment.
  • Do not add Asafoetida powder because it has wheat flour added. if you want it to be gluten-free you better not add it.

I want to take some time to let you understand what it is for a food to be gluten-free.

Gluten is a protein found in wheat.It is not just wheat alone but some other common grains contains gluten.

The common grains that has gluten are wheat,barley and rye.Some people say oats could be contaminated with wheat flour and it a suspect when it comes to gluten.Also,ingredients that are commonly used in processed  foods like modified starch can be made from wheat and they do contain gluten.

Gluten can be found in foods that many not require wheat or other gluten carrier but in the production of these foods their conveyor belt might be dusted with flour to prevent it from sticking and thus they become contaminated with gluten.

Gluten free diet is a must for people having gluten sensitivity,intolerance and auto-immune disease like Celiac disease..It is also necessary that people having allergy to wheat,barley and rye do take gluten free diet.

There are over 190 disease that are lined to gluten sensitivity and gluten intolerance,Celiac tops them all.There is no diagnosis for Celiac yet that why is advisable for such people with this disease to avoid gluten food or diet.Gluten free diet is also good for children suffering for autism.

Alternatives to Gluten products are:

Chai, flaxseed,amaranth flour,cornstarch,millet flour,potato starch,potato flour rice flour and the likes.

Preparing this waffles is making is gluten free.That is,you will not use wheat flour but wheat free baking mix.

2 teaspoons baking powder
3 teaspoons sugar
1/2 teaspoon salt
1/4 cup(2oz) vegetable oil

Preparation Methods


  • Mix the eggs yolk and milk together
  • Then add the wheat free baking mix,baking powder,sugar,salt and mix  them well.
  • Add the oil
  • Beat the egg whites till it is stiff and then fold into the batter.

Note


The batter is the final thing to add to the breakfast.They are made fluffy by beating the egg whites separately and then folding then as said in the preparation.

Ensure that the amount of mil used is suited to "Bob Red Mill Wheat Free Biscuits and Baking Mix.

The baking mix is a mixture of non wheat flours and some gluten-free binders.See that the baking mix you use is actually gluten free not just wheat free.Bear in mind that you adjust the amount of milk to get the right consistency.
